Avocado doesn't bake well…
by Ryanne Hawk

My lifestyle choices aren’t for the faint of heart. Just ask Nita from The Bookchick Blog reviews, or my best friend, Jinni James. You see… I love avocados. I will try and sneak them into most things. In fact, I put them in my smoothies every morning.

I even make tuna fish with avocado instead of mayonnaise. (and if you can get past the initial shock of eating green tuna, I promise it’s worth it!) Although, I do add bacon to it, and black pepper. Sometimes Cayenne as well. And sprouts. I love me some alfalfa sprouts with my tuna.
Anyway!

So recently, I’ve embarked on a mission to make my kids healthier (to go) breakfast options for during school. I read a recipe for spinach muffins, and thought to myself… I can totally make that work! (And yeah, they were wicked green muffins, and my boys called them John Deere Muffins) they taste like banana muffins though, but healthier…

As I was perusing the fridge, a little light bulb went off in my head. Ding! I can add avocado to my batter, and my family will get a little extra boost of protein and fat. Score!

Yeah… it didn’t work the way it did in my head. Tasted AMAZEBALLS, but… didn’t rise, was super mushy inside, and looked like a hockey puck instead of a muffin. (I wish I’d taken pictures)
For those out there that are like me and like to experiment with baking and cooking, note to self – avocado doesn’t bake well.

Here is the recipe for Spinach Muffins from Green Forks:

Spinach Muffins
Author: Laura Machell
Serves: 16 muffins
Ingredients
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp salt
  • ¼ cup canola oil
  • ¾ cup milk
  • 1 (6 ounce) bag fresh baby spinach
  • ½ cup mashed banana (from about 1 to 2 bananas)
  • 2 tsp pure vanilla extract
Instructions
  1. Preheat oven to 350°F and line two 12-cup muffin pans with paper liners.
  2. Whisk together dry ingredients in a large bowl: flours, sugar, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a blender, place oil, milk, and spinach. Blend on high for about 30 seconds or until completely puréed. Add banana and vanilla; blend on low just to mix.
  4. Pour puréed mixture into dry mixture and fold together with a rubber spatula until completely combined.
  5. Fill muffin cups about ⅔ full and bake 18-20 minutes or until a toothpick inserted into the center comes out clean.

Of course, I didn’t follow this recipe exactly (and those that know me personally, know I can’t follow a recipe to save my life without altering it in SOME way. I just… can’t. I used all unbleached organic flour (no wheat) and like 5 banana’s instead of sugar. Because banana’s are already super sweet. Plus… yum! I also used hemp oil in my first batch of muffins instead of canola (because it’s healthy, and GREEN too…lol) the second batch I used olive oil and coconut oil instead of Canola. Both worked out well. I also used almond milk instead of regular milk. AND I added dark chocolate chips. Like a lot of them. Because… Chocolate. That’s why.

They came out delicious. I’ll probably add more baking powder next time. They didn’t rise as much as I wanted. But they tasted great.

Here’s to healthy eating!

Or to green muffins to sneak veggies into your kids foods…

Guest Blog: Blood Rose by Danielle Rose

UFI welcomes Author Danielle Rose. Thanks for Joining us!!

Favorite books as a pre-teen.

It’s no surprise that I haven’t always been a reader. In fact, even though I vaguely remember writing stories as a child, I don’t credit my writing’s beginning until late 2009. I used to read Buffy the Vampire Slayer comic books and teen novels by Caroline B. Cooney, but I began seriously devouring books in late 2008. I was nineteen at the time, and since then, I’ve read hundreds of books—some of which have not only changed my life but also completely affected me as a writer.
  1. Stephenie Meyer’s Twilight Saga. Unlike most fans, I didn’t know what this series was until I saw the file version of Twilight on a whim. I found Meyer’s take on vampires very unique and after my interest peaked, so did the number of novels I read that year.

  2. Richelle Mead’s Vampire Academy series. I found the world Mead created fascinating. She was able to mix mythology and folklore with the vampires we fell in love with. She brought in the evil bloodsuckers we love to hate, as well as the forbidden romances we couldn’t get enough of.

  3. Zac Brewer’s Chronicles of Vladimir Tod. Brewer’s Vladimir Tod is a marvelously realistic take on what it means to be a vampire in today’s society. In Brewer’s series, the protagonist, Vlad, is bullied, has acne, and doesn’t fall in love with the most popular, most beautiful girl at school.

    4.   Chloe Neill’s Chicagoland Vampires series. Neill was able to bring politics into the mix and create a world where humans are aware of the existence of vampires. Neill’s novel describes heart-pounding action with just the right amount of smokin’ hot sexiness.

 Excerpt:
I looked at my house, my eyes lingering on my bedroom window. My mother stood beside the curtain, watching me, before quickly stepping out of view. I wanted to call out to her, beg her to let me stay, but I knew leaving was my only option. They would never be safe around me until I was able to control what I was.
Focusing on the room, I closed my eyes and listened. At first, I heard nothing, but then the world consumed me.
“Stay safe, my love,” my mother whispered.
“Can you believe Braedon said that?” a girl said with a chuckle. Her voice was distant, hushed. She sounded young, weak.
“Did you want anything from the store?” a man asked. He was closer. His voice was coarse, deep. He was closer to me than the girl. I heard him clearly, as if he stood just behind me. But no one was there.
Laughing.
Crying.
Horns.
Barking.
Clanking heels.
Hiss of a cat.
Squeal of tires.
Sizzling of a fryer.
I dug my fingers into my hair, collapsing to the ground. My mouth opened, but I couldn’t breathe.
“Focus on just me,” Jasik said as he pulled my head against his chest. “Shield yourself from the world. You can do it. Raise your shield, Avah.”
“I-I can’t. It’s s-so loud!” I said, pushing myself harder against him and squeezing my eyes shut. I was sure the witches had done something. I had outworn my welcome, and now, they were using their powers against me. This was it; this was the end.
“Avah, you can do this. You’re strong. Pull your strength from within. Use it to shield yourself from the world.”
“I can’t!” I yelled, angry that he was barking out orders I couldn’t comprehend.
“Jeremiah! She needs you,” he yelled.
I opened my eyes as a hand firmly grasped the back of my head. Kneeling before me, the vampire with dark skin and glowing, gray irises pulled me into his arms. I met his gaze, and slowly, the world went silent.
“She’ll be fine,” Jeremiah said, dropping his arms. “I’ll slowly remove it to make the transition easier.” He walked away.
After the pain subsided, I stood. “What did he do to me?”
Jasik’s face hardened as he stared at me. “Let’s get somewhere safe, and then we’ll talk.”
“No. Tell me everything. No,” I said, taking several steps backward.
After several minutes, he softened and said, “It’s not that simple, Avah.”
“Make it simple.” I wouldn’t budge. I’d sit outside my home until my coven came for us if that’s what it took.
“I’ve never encountered a vampire like you. And I’ve been around a long time,” he said as he turned and began walking toward the others. “I’ve heard the stories, but I always thought they were just that: stories.”
I walked beside him, meeting his gaze. “What do you mean? Why am I so different?” I said. I kicked a stone with my foot, watching it bounce against the concrete, stopping once it reached a patch of grass.
I felt the pavement’s vibrations rattle through my body as the stone glided against it. I knew it had to be my status as the chosen one. I had never heard of a witch becoming a vampire, though I always thought it had to have happened over the centuries. Elders must have assumed a witch would one day turn, because they passed down laws and penalties against it. Speaking of turning into an immortal came at a high price. The betrayal to one’s coven would cost a witch her life. I wondered if the vampire knew I was chosen to harness The Power of the gods, the power that was to annihilate the vampire race.
Glancing up from the ground, I watched as two teenagers approached us. The boy had his arm around the back of the girl’s neck, pulling her close to him. She smiled as he did this, probably enjoying the safety he provided—not realizing that there were monsters in this world that his arm was no match for.
I examined his physique as a scientist would in a laboratory. His arms and chest were tightly bound by his t-shirt. Thin white lines danced across his pale skin. Stretch marks. The closer we came, the more I saw. Goosebumps covered his skin; fine hairs stood on end. I remembered that the air was cool during the ritual, though I didn’t feel chilled now. I felt the breeze but not the cold.
They were just feet in front of us. His shirt seemed to become tighter and tighter the closer they came. I wondered if he took steroids. Time seemed to slow as they passed. The wind picked up, blowing their scent into my open and willing nostrils. I licked my lips, my tongue sticking to dry parts of skin.
Shutting my eyes, I swallowed hard as my throat began to close. Its dryness was painful, scratchy. When I opened my eyes again, my fangs were exposed, and I was just steps behind the humans. I didn’t know how I had gotten there, and I didn’t care. An arm’s length was all that separated them from death, from me. Just before I could leap from behind, I was yanked backward.
“No.” His voice was stern, controlling. I was shocked that he cared. Vampires were murderers. Why would he stop me?
Looking up, I met his eyes. I didn’t understand why he had stopped me, but I was thankful he had. Remembering who I was had become more and more difficult as the night went on. The vampire’s proximity felt oddly intimate, making my skin burn. My fangs retracted, and I pulled away from my captor, horrified at my newfound hunger.
I shook my head and wrapped my body in my arms. In that moment, I hadn’t cared if I took that teenager’s life. I had lost control. I had wanted to kill—I was ready to kill. But I didn’t feel like a killer. I just felt hungry. I dropped my arms and resorted to the only thing I knew how to do in this new world: I ran.

Review: The Veil by Chloe Neill

The Veil
Author: Chloe Neill
Release Date: August 4, 2015
Publisher: NAL Trade
Devil's Isle Book #1
ISBN:  0451473345
ISBN13: 9780451473349
Genre: Urban Fantasy
Review Copy Source: NetGalley
Seven years ago, the Veil that separates humanity from what lies beyond was torn apart, and New Orleans was engulfed in a supernatural war. Now, those with paranormal powers have been confined in a walled community that humans call the District. Those who live there call it Devil's Isle.

Claire Connolly is a good girl with a dangerous secret: she’s a Sensitive, a human endowed with magic that seeped through the Veil. Claire knows that revealing her skills would mean being confined to Devil’s Isle. Unfortunately, hiding her power has left her untrained and unfocused.

Liam Quinn knows from experience that magic makes monsters of the weak, and he has no time for a Sensitive with no control of her own strength. But when he sees Claire using her powers to save a human under attack—in full view of the French Quarter—Liam decides to bring her to Devil’s Isle and the teacher she needs, even though getting her out of his way isn’t the same as keeping her out of his head.

But when the Veil threatens to shatter completely, Claire and Liam must work together to stop it, or else New Orleans will burn…

Chloe Neill's Chicagoland Vampires novels have a prominent place on my bookshelf so when I saw that she had a new series coming out, I knew I would be reading it as soon as I could get my hands on it.

The setting was a big plus for me. I have never been to New Orleans, but have read a lot about it and I found Chloe's version of New Orleans to be very interesting and easy to follow. I enjoyed the post-apocalyptic/Dystopian feel as well as the whole Devil's Isle aspect of the city. The Fae storyline was interesting and I found myself looking forward to more details as I was reading.

For some reason I wasn't overly invested in the main characters and actually connected to a few of the secondary characters quicker, which is a bit weird to me. That's not to say I didn't LIKE the main characters, I did, I just would have liked to feel more invested in them by the end of the book. There was some romance between Claire and Liam, which I actually enjoyed quite a bit. Liam held himself back a lot and it takes a bit for us to find out why, but I was rooting for their relationship (and still am moving forward).

Neill's Chicagoland Vampires series is still my favorite of hers, but I really enjoyed the introduction the Devil's Isle series and I am very interested in seeing what will happen next for Claire and Liam.

I gave it 3.5/5 stars

Review + Giveaway: Magic Shifts by Ilona Andrews

Magic Shifts
Release Date: August 4, 2015
Publisher: Ace
Kate Daniels Book #8
ISBN:  042527067X
ISBN13: 9780425270677
Genre: Urban Fantasy
Review Copy Source: Publisher
In the latest Kate Daniels novel from #1 New York Times bestselling author Ilona Andrews, magic is coming and going in waves in post-Shift Atlanta—and each crest leaves danger in its wake…

After breaking from life with the Pack, mercenary Kate Daniels and her mate—former Beast Lord Curran Lennart—are adjusting to a very different pace. While they’re thrilled to escape all the infighting, Curran misses the constant challenges of leading the shapeshifters.

So when the Pack offers him its stake in the Mercenary Guild, Curran seizes the opportunity—too bad the Guild wants nothing to do with him and Kate. Luckily, as a veteran merc, Kate can take over any of the Guild’s unfinished jobs in order to bring in money and build their reputation. But what Kate and Curran don’t realize is that the odd jobs they’ve been working are all connected.

An ancient enemy has arisen, and Kate and Curran are the only ones who can stop it—before it takes their city apart piece by piece…

MAGIC SHIFTS is the first book after Curran and Kate left the pack. I was really excited to see how they would live their life now and I wasn't disappointed. I really enjoyed the storyline and the fight that Kate and Curran found themselves in. They left the pack, but their allies wouldn't let them leave them and I really enjoyed how they rallied around Kate and Curran. Now that Kate knows her father and they have a sorta kinda relationship, it was interesting to see them interact. They got together in the most unlikely place that made them seem like the two normal people they are definitely not. Fun times.

Some thoughts on things you won't understand until you read MAGIC SHIFTS. *Warning they can be a little spoiler-ish, so go forward at your own risk.* There was some really hard things to read in MAGIC SHIFTS. A character was very close to death and never having heard them give up before, it was really hard to hear them do so now. I balled my eyes out, messy crying at its finest during this point in the book. I LOVED when Kate visited the casino, EPIC! I am really excited for the time that Kate and Curran become pregnant, but I really hope the prediction made (by the bad guy) towards the end of MAGIC SHIFTS is not something that comes true.

I can't think of anything in MAGIC SHIFTS that I didn't enjoy. I loved the character development and I loved how the storyline progressed. Bring me more Kate!

I gave it 5/5 stars

Her Sinful Angel – Excerpt

Lucifer stood in his study in front of the middle of the three towering windows, his gaze fixed on the distant plateau. White light broke the darkness there, a sign that angels were travelling between his realm and the mortal one.
A world he hadn’t set foot in for millennia.
His golden gaze slid off to his left and downwards, towards the room where he had left the mortal female.
Her world.
He clasped his hands behind his back and studied the black stone floor. His black suit jacket stretched tight across his chest as he breathed slowly but steadily, his mind churning over everything he had learned about the woman in his custody.
He still didn’t know why Mihail had brought her to him, and he couldn’t help thinking that it was a trap. It was possible that the woman had been given instructions, orders that were buried so deep in her mind that she wouldn’t remember receiving them. Some angels possessed the power to manipulate weaker creatures in such a manner, and everything she had told him yesterday had made it clear that Mihail or another angel had tampered with her memories.
If she had been given orders, then he had to wait for the right event to trigger them before he could discover why Mihail had sent her.
Lucifer narrowed his gaze on the floor, his focus on the woman.
He didn’t think she was anything other than mortal, but it was entirely possible he was wrong about that. Some species could masquerade as mortals. Shifters in particular. It had been a very long time since he had encountered one from that species, long enough that he might not recognise them.
She could be a witch too.
But she didn’t feel powerful to him. Her strength was barely a drop in the ocean of his.
Was she using a spell to mask her power and muddle his ability to detect lies on her?
He shook his head at that.
She hadn’t lied to him when he had asked whether she could remember what had happened to her, but she had lied when she had told him that she couldn’t think of a reason why anyone would want to harm her or have her kidnapped. If she possessed the ability to conceal her lies, she would have hidden that one from him.
There had been a haunted edge to her bright peridot eyes as she had uttered that lie and a spike in her heart rate that had warned him that she had walked the same path as he had millennia ago—a path of pain and suffering.
Of betrayal.
A path he still walked now.
He didn’t know what had happened to her, and he didn’t want to know.
She wasn’t here so he could learn about her. She was here so he could discover Mihail’s plan and take the angel down once and for all.
Lucifer dragged his focus away from her and fixed it back on the plateau.
Mihail was up to something and he had to concentrate on discovering what that was.
His focus slipped, his acute senses drifting to pinpoint the woman again.
Who had betrayed her?
The first stirrings of anger warmed his heart, warning him to pull his thoughts away from not her but the betrayal she had suffered before it was too late and his mood degenerated.
All of Hell would suffer if it slipped his grasp and his temper flared, but even the knowledge of what he might do in a fit of rage wasn’t enough to stop him treading the dark path of his memories to a place he had tried to forget.
A time when he had trusted someone and they had betrayed him.
A time when he had been given no choice and had been powerless to stop his fall.
Lucifer curled his hands into fists, his emerging black claws cutting into his palms. He glared at the plateau as another white streak of light appeared and growled through his short fangs, the desire to teleport there and tear into the angels almost overwhelming him and shattering his fragile hold on his control.
He wanted to rip their wings from them just as his had been torn from him.
He wanted them to suffer the torture that he had, the agony of being cast from their home, slung into a bottomless and dark pit where only endless pain awaited them.
He wanted them to know how it felt to do all that their master asked of them, to carry out every terrible act and horrific crime regardless of how it had made them feel, only to have that same master betray them.
Lucifer snarled and slammed his left fist into the black wall beside the window. The stone shattered under the blow but he didn’t feel the pain that ricocheted up his arm. He felt only the burning rage that lived in his heart, the pain of a thousand times of having his wings torn from his back, a hundred thousand lashings that had peeled the flesh from his bones, and a million hours of wondering what he had done wrong.
Followed by a million more contemplating his revenge.
He hadn’t realised it at the time he had served Heaven, a loyal dog for his master, but he had been set on the path towards his fall from the moment he had been created. It had all been part of a plan to create balance between the three realms.
His master had shaped him, giving him duties and missions with little information and stating that he trusted him to interpret the missions and carry out the duties therein without aid. Lucifer had felt he had owned a position of power, a place at his master’s side, but in reality he had been given as little information as possible in order to drive him into committing sins.
He had wanted to please his master, and he had ended up breaking unknown rule after rule, committing sin after sin.
When he had felt something stirring inside him, a darkness that had been destroying the light, he had wanted to stop.
It was then that his master had dealt the final blow.
He had been exiled from Heaven and thrown into the pit.
At the time, the pit had been a place of nightmares, filled with vile creatures bent on destroying angels, drawn to their light by a ravenous hunger to extinguish it.
Centuries into his torture, Lucifer had realised the reason the pit had been created. It had been designed as a place of punishment for angels. That had given him false hope that he could escape the pit if he served his time.
He had survived the torture his captors had dealt, the abuse they had inflicted upon him, using him against his will. He had wallowed, tormented by every sin he had committed in his life serving his beloved master. He had writhed in agony as he had tried to fight and claw his way out of the darkness to stand on his feet again. He had wanted to repent so he would be welcomed back into the fold.
He had wanted to return home.
But it had become too much for him, and the darkness had been too strong.
After what had felt like an eternity of fighting, he had surrendered to it, allowing it to fill him and vanquish his softer feelings in order to end his suffering and stop the pain. His thoughts had turned from repenting to revenge.
When he had eventually seized control of the realm through brute and relentless force, he had ended up changing it without really thinking about what he had been doing.
He had hunted and destroyed most of the original inhabitants of Hell and sent the rest fleeing to the far corners of Hell, allowing the weaker breeds of demons to emerge from the shadows and take their place.
Demons who had worshipped him as their master.
Lucifer hadn’t realised the power he possessed as the ruler of Hell until Heaven had chosen to create a new race of angels to serve it. He had tainted the soul of the first angel during its creation, a mere drop of darkness that had spread through it and corrupted it.
He had seen the extent of his power in that moment and he had embraced it.
He had thought of nothing but revenge since then. Every act he had undertaken had been done with the intent of dealing a blow to Heaven as they had dealt a blow to him. He had begun to grow an army, welcoming the fallen angels into his fold and giving them power so they could destroy any of the remaining demons who sought to punish them for their sins and could carry out his orders in the mortal realm. He had shaped the weaker demons and sent them forth to corrupt the humans. He had done it all to strike a blow that would shake Heaven to its foundations.
Wars had followed, a struggle for power that was endless and beautiful.
Lucifer smiled grimly at the pleasing memories as power coursed through him, darkness that bled from his skin like smoke and writhed as shadows around his arms.
He pulled his fist from the wall and turned his palm towards him, splaying his fingers as he watched the black ribbons fluttering around them.
He had lived shrouded in darkness. A king in his realm. He had passed millennia without feeling a thing.
No trace of light left inside him.
Until Erin.
The day he had learned of his daughter’s existence, he had been filled with a new purpose.
A desire to use her to finally achieve his dream of bringing down Heaven.
And the day he had first set eyes on her, something else had happened to him, something he had been fighting to hide ever since.
A tiny spark of light had burst to life in the dark cold pit of his soul.
Lucifer pressed his hand to his chest, the soft fabric of his black jacket, tie and shirt cushioning his palm. He curled his fingers, digging the tips into the material as he felt that light inside him, tormenting him, growing despite his attempts to squash it out of existence. It refused to die though, kept spreading tiny tendrils through him, reaching ever outwards and gaining ground against the inky dark.
As it grew, it restored parts of him that were better off dead, softer emotions that had no place existing inside him or in his realm. Emotions that were dangerous to possess in Hell. There were still creatures here drawn to the light in angels.
If his legions learned of the light waging war inside him, if the demons learned of it, a battle for his throne would erupt.
Every creature with power in his realm would seek his head.
He growled from between clenched teeth and vowed that none would ever know of it. He made sure that his men never witnessed his moments with his daughter and grandson, and those were the only times he felt powerless against the light, unable to contain and control it.
He would find a way to expel that light from his soul again, because he would do anything to protect his position. He might not have asked for his role in this realm, but it was his to play now and he had come to like his life in Hell. This realm was his home, his everything, and no one would take that from him.
His golden gaze dropped back to the floor.
No one.
Any threat to his throne would be dealt with.
Painfully.
He had given the mortal female time to become accustomed to her situation, but now that time was up.
Now he would use the small sliver of trust she felt towards him and her attraction to him to his advantage.
The trick Mihail had used on her to scrub her memories would be wearing off. While she wouldn’t remember that she had been taken by an angel, she might remember if Mihail had said anything to her or taken her anywhere before bringing her to Lucifer’s fortress.
And now that Mihail’s power was fading, Lucifer could employ his own abilities to sift through her memories as she tried to recall the events that had brought her to him.
If he discovered that she wasn’t in on Mihail’s plan, he would set in motion his own one.
He would implant orders into her head, ones that Mihail would unwittingly trigger if he returned for her.
The little mortal would become the instrument of the angel’s fall.
And Lucifer would be waiting for him with open arms.
